White Corn Guacamole

Ingredients

  • 1 bag white corn thawed
  • 4 avocados
  • 1 bell pepper
  • 2 limes
  • 1 large tomato
  • 1/4 white onion
  • 2 T cilantro leaves or a handful of chopped cilantro
  • 1 1/2 tsp salt
  • 1 1/2 tsp lemon juice
  • 3 grinds black pepper
  • 1 pinch garlic salt (~1/2 tsp)

Instructions

  1. Wash all vegetables
  2. The corn for about 1 hour. Put into mixing bowl.
  3. Open avocado and dice it. Do not mush it! Add to the bowl.
  4. Open the bell pepper and wash out all seeds. Dicing too small to medium sized pieces. Add to the bowl.
  5. Chopped tomato into small to medium sized pieces. Add to the bowl.
  6. Cut onion into four pieces. Mints one piece into petite pieces. Store or discard other pieces. You will not need them. Add to the bowl.
  7. Add cilantro to the bowl.
  8. Squeeze fresh lemon juice into the bowl.
  9. Add salt and lemon juice.
  10. Add black pepper.
  11. Add garlic salt.
  12. Toss all ingredients using a ladle. The ladle will mush them enough on its own, don't try to mush it more than naturally.
