+3 up/-3 down = 350ºF method

  • works on 8, 10, 12-inch regular depth ovens
  • total charcoal count is double the oven size (8=16, 12=24, etc.)
  • pot diameter +3 on top, pot diameter -3 on bottom
    • 8-inch oven—11 on top, 5 on bottom
    • 10-inch oven—13 on top, 7 on bottom
    • 12-inch oven—15 on top, 9 on bottom
  • adding or removing charcoals on top will add or subtract 25º F
  • charcoals last about 30-minutes; you may want to replace every 20-minutes

When uniform baking is required (cobblers, pies, breads)

  1. rotate entire pot 1/3 turn one direction
  2. rotate lid only 1/3 turn in opposite direction
  3. rotate both every 10–15 minutes
